Указаны сорта, наиболее пригодные для производства марочных соков прямого отжима для различных групп потребителей (взрослое население, дети дошкольного и школьного возраста, дети раннего возраста), а также требования к качеству и безопасности продукции в соответствии с действующими ТНПА. Рекомендации являются основанием для закладки преимущественно моносортовых сырьевых насаждений яблони и позволят перерабатывающим предприятиям производить высококачественные марочные соки прямого отжима.</p></abstract><trans-abstract xml:lang="en"><p>The developed recommendations present the results of a chemical-technological study of apple species of different ripening periods. The species that are most suitable for the production of branded direct-extracted juices for various consumer groups are indicated (adults, preschool and school children, young children), as well as requirements for the quality and safety of products in accordance with the current TNLA.
